The Tonelli Multiproduct Sponge Cake Line is a fully automated system that streamlines the production of layer cakes and Swiss rolls from batter preparation to packaging. This line is designed for high-volume production with exceptional consistency, quality, and adaptability for various cake types, offering flexibility through adjustable settings and interchangeable accessories.

Core Components and Functions of the Tonelli Sponge Cake Line:

  • Batter Preparation: The system begins with precise ingredient incorporation into a uniform batter using Tonelli’s mixing solutions, optimized for consistent cake texture and quality.
  • Two-Color/Particle Integration: Through the Dynamic Colour Mixer, liquid flavors or colors can be injected into pumpable batters, allowing dual-colored designs or particle integration for visual and textural variety. This feature includes a second roller depositor for enhanced versatility.
  • Decoration: The line supports multiple decoration styles, including rhomb, sinusoidal, and combined patterns, achieved with precision icing equipment.
  • Cooling: Baked sponge cakes cool efficiently with overhead or in-line cooling conveyors, selected based on spatial constraints. The overhead option includes an 8° slope to save space, while both conveyor types are available in stainless steel wire-mesh or plastic grid models for optimal cooling.
  • Longitudinal Cutting: Circular blades on a rotary shaft enable accurate longitudinal cutting of sponge strips, adaptable to various cake widths by easily changing the blade holding shaft.
  • Cream Preparation: The line accommodates diverse cream and filling preparations, including continuous and batch pasteurization systems for superior cream quality, ideal for a range of filling types.
  • Wetting: A syrup wetting system enhances cake moisture and flavor. Tonelli’s syrup unit directly supplies the band-mounted distributors with customer-prepared syrups.
  • Cream Spreading: Cream or jam filling is evenly spread on sponge sheets via a collector with adjustable spreader taps, ensuring a balanced, uniform layer.
  • Overlapping: The Layer Cake processing station offers adjustable polyurethane spades to layer sponge sheets for multi-layered cakes. The spade setup is customizable based on cake size and layer count, with a guide system for seamless cake formation.
  • Rolling: Swiss roll and mini roll production is streamlined by an automatic rolling device. Knurled plastic screws guide and shape the sponge strips, while infeed spades and outlet guides maintain uniformity in rolled cakes.
  • Punch Cutting: For custom shapes, an Automatic Punch Cutter provides transverse cutting, creating precise geometric shapes (round or rectangular) for various cake bases and individual seasonal cakes.
  • Final Cutting: The Transversal Cutter completes the production line, slicing the finished product to the desired length, with different models available based on product type and production requirements.
